Davella Studios was retained by Aamanns-Copenhagen, the TriBeCa branch of Adam Aamann’s popular Denmark eatery, to provide food service design and construction consulting. The retail space had never housed a restaurant before, which created many challenges to bring the necessary utilities to the space, upgrade services and acquire numerous new permits. Charged with creating a full bakery operation to produce Aamanns’ signature rye bread, the kitchen space had to be designed for both baking and hot/cold production, all within an extremely small space.
